Ingredients
¼ Green cabbage (Thick outer leaves removed)
¼ Red cabbage (Thick outer leaves removed)
Handful of Rocket
Mizuna leaves (optional)
4 leaves Radicchio (white ribs removed)
1 to 2 Carrots
Dressing
1 large lemon
Fresh Dill
3 Tbsp Capers
30ml Olive oil
1 large tsp Honey
1 large tsp of Mustard
¼ tsp of Balsamic vinegar or Apple cider vinegar
½ tsp flaky sea salt.
Method
Choose small cabbages.
Remove the thick, protective hard leaves and cut into quarters, cut out the thick inner white core.
If using cabbage from the garden or organic, soak it first in cold water with salt flakes added for 10 minutes and then leave it to drain.
Chiffonade (shred very finely) the cabbage, using a mandoline set on 2, or a food processor or a sharp knife. - Add to a large bowl.
Remove the centre white part of the leaves of the radicchio if you don’t want too much bitter and cut into ribbons – Add with the cabbage.
Peel and grate the carrot. Add in along with the Rocket and Mizuna. (Thinly sliced Celery or Fennel can also be added at this point if desired)
Toss and set aside.
The Dressing
In a jar or bowl, add.
Finely chopped the Dill (fresh Oregano or chopped Parsley can be used depending on taste and availability)
The Juice of 1 large lemon
3 Tbsp Capers (can be rinsed if you find them too salty)
30ml Olive oil
1 large tsp raw Honey
1 large tsp of Mustard
¼ tsp of Balsamic vinegar or Apple cider vinegar
½ tsp flaky sea salt.
Shake or whisk until when combined.
Add to the salad and toss well to make sure the dressing is well mixed in
